I made dinner & dessert today. Dinner was lentil dahl with Roasted squash & served it with brown rice. I made a tried & true chocolate chip cookie recipe. I also tried a new recipe, for ice cream with no ice cream machine. It's whipped evaporated milk with powdered sugar & vanilla that's frozen. I don't know how that will have turned out but fingers crossed.

So the ice cream turned out pretty good. I had it after dinner so it had about 6-7 hours to freeze. It was very fluffy and smooth. It was a bit melty & probably needed more time to freeze. One batch made enough for about 4 medium servings. I used my stand mixer to mix it. I took it out to fluff it 3 times when it was freezing. Once an hour or so. Then I just let it be.

It reminded me of the soft serve you get a buffet. The kind that's more ice milk then ice cream but is still tasty frozen goodness.

Final update. After freezing overnight the texture was great. Very much like commercial ice cream. Still very fluffy when eating. We serves it with a half a Chopped up chocolate chip cookie on top of each bowl, which was amazing!
